Information and Home Care Instructions for COVID-19 
 
COVID-19 is caused by a virus called Coronavirus. Coronaviruses are a common cause of the common cold. COVID-19 is a novel (newly discovered) Coronavirus that is currently causing illness across the world. Most of those infected will have a limited and mild case. It will feel more like a cold. Most people who become infected with COVID-19 will be able to care for themselves at home. Currently there is no specific anti-viral treatment for COVID-19, and there is no vaccine at this time. Antibiotics such as penicillin do not kill viruses.
 
The Centers for Disease Control (CDC) believes at this time that symptoms of COVID-19 may appear in as few as 2 days or as long as 14 days after exposure. Typical COVID-19 symptoms include fever, muscle aches, cough and shortness of breath that can last for two weeks or even longer.
20% of those infected with COVID-19 can have more serious symptoms such as high fever or breathing problems which need oxygen and hospital treatment.
 
Preventing Spread
 
COVID-19 is mostly spread through person-to-person close contact (within about 6 feet). Small droplets from coughing and sneezing can enter the mouth and lungs of those nearby. It is also possible that infection can happen by touching a surface or object that has virus on it such as a table or door knob and then touching their own eyes, mouth or nose, but this is not the main cause of spread.
 
People are thought to be most contagious when they are most symptomatic (the sickest) and especially with coughing. Some spread might be possible before people show symptoms; there have been reports of this, but this is not thought to be the main cause of spread.
 
COVID-19 appears to spread easily
  • Stay home when you are sick
  • Avoid people who are sick (6 feet rule)
  • Avoid touching your eyes, nose, and mouth
  • Cover your cough or sneeze with a tissue, then throw the tissue in the trash
  • Clean and disinfect frequently touched objects and surfaces using a regular household cleaning spray or wipe
  • CDC does not recommend facemask use for those people who are well
  • Face Masks should be used by people who show symptoms of COVID-19 to help prevent the spread of the disease to others
  • Use a facemask and gloves if you are taking care of someone in close settings (at home or in a healthcare facility)
Gloves should never replace appropriate hand hygiene
  • Wash your hands often with soap and water for at least 20 seconds
  • Wash especially after using the bathroom; before eating; and after blowing your nose, coughing, or sneezing

If soap and water are not readily available, use an alcohol-based hand sanitizer with at least 60% alcohol.
 
Always wash hands with soap and water if hands are visibly dirty
 
 
Treatments
In general, follow these three basic rules:
 
(1) Keep warm and rest as much as possible. If you feel like resting, you should.

(2) Take plenty of fluids. Food is not as important since appetite will return when you are well.
 
(3) For fever, take Tylenol or Motrin in normal doses (see label on the bottle).
 
If cough is present: Humidification and drinking lots of fluids helps to moisten and loosen up sticky mucus.
 
Non-prescription drugs designed to suppress cough, such as Delysm, Robitussin, Mucinex are occasionally helpful. If you use an inhaler, you might need to use it more often.
 
If your throat is sore: Gargle with warm water (1/2 tsp salt in 1/2 glass of water). Try cold packs to the outside of your throat to help ease the pain of swallowing.
 
Humidification of the air you breathe (use vaporizer, pans of evaporating water, or steaming tub or shower) and lots of fluids help.
 
If temperature is elevated: Fluids are doubly important. Fever medicine (such as Tylenol or Motrin) should control temperature. Persistent temperature elevation of 103-104 degrees is a danger sign.
 
If nausea and/or diarrhea are present: Eat only clear liquids, soups, or juices as tolerated. Remember fluids are important to prevent dehydration.
 
If your symptoms worsen call your doctor for further instructions, especially if you notice:
 
*  Persistent temperature elevation greater than 103-104 degrees despite fever medication 
 
*  Bloody sputum or increasing chest pain

*  Increasing difficulty getting your breath

*  Stiff neck preventing bending neck and placing chin on chest

Hand Sanitizer -- How To Make Your Own

Some commercial hand sanitizer contains ingredients as scary as the germs they protect you from, so why not make your own hand sanitizer from ingredients you select? This is an excellent project for kids as well as adults since the project can be expanded to include a discussion about hygiene and disinfection. You'll save money, protect yourself from germs, and can customize the scent of the hand sanitizer so it doesn't smell medicinal.  Also, will help during the shortage of this product right now because of the Coronavirus, but I may never buy it again, it's really quite easy to make.
 

How It Works

The active ingredient in this hand sanitizer recipe is the alcohol, which needs to comprise at least 60% of  the product in order to be an effective disinfectant.
 
The recipe calls for 99% isopropyl alcohol (rubbing alcohol) or ethanol (grain alcohol, most commonly available at 90%-95%). Please don't use any other types of alcohol (e.g., methanol, butanol), as they are toxic. Also, if you use a product that contains a lower percentage of alcohol (e.g., 70% alcohol) then you need to increase the amount of alcohol in the recipe or it won't be as effective.
 

Essential Oils in Hand Sanitizer

In addition to adding fragrance to your hand sanitizer, the essential oil you choose may also help protect you against germs. For example, thyme and clove oil have antimicrobial properties. If you are using antimicrobial oils, only use a drop or two, since these oils tend to be very powerful and might irritate your skin. Other oils, such as lavender or chamomile, may help soothe your skin.
 
 

What You'll Need

Materials

  • 2/3 cup 99 percent rubbing alcohol (isopropyl alcohol) or ethanol
  • 1/3 cup aloe vera gel
  • 8 to 10 drops essential oil, optional
 

Steps to Make Hand Sanitizer

Nothing could be easier! Simply mix the ingredients together and then use the funnel to pour them into the bottle. Screw the pump back onto the bottle and you're ready to go.

Make sure you have your rubbing alcohol, aloe vera gel, and optional essential oils ready and measured out.

Pineapple-Cucumber Gazpacho with Shrimp

Sweet-tart pineapple adds a nice balance to a classic gazpacho. A garnish of shrimp tossed with cilantro and macadamia nuts turns this fresh, cooling soup into an entrée.
 
Ingredients
  • 3 cups chopped pineapple (from about 1/2 pineapple), plus 1 cup sliced pineapple for garnish
  • 1 large cucumber, peeled, seeded and chopped
  • 1 1/2 cup pineapple juice
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lime juice
  • 1 jalapeño pepper, halved and seeded
  • 3/4 tablespoon kosher salt
  • 3 green onions, thinly sliced
  • 2 tablespoons roughly chopped macadamia nuts, for garnish
  • 2 tablespoons torn cilantro leaves, for garnish
  • 1/2 pound cooked shrimp, peeled and deveined, chopped into large pieces
  • Gochugaru flakes, for garnish
Method
 
Combine pineapple, cucumber, pineapple juice, oil, lime juice, jalapeño and salt in a blender and purée until smooth.
 
Add green onions and purée just until combined.
 
Transfer soup to a bowl, cover with plastic wrap and chill for at least 2 hours.
 
In a small bowl, combine shrimp, pineapple, macadamia nuts and cilantro.
 
Ladle soup into bowls and garnish with shrimp mixture plus a sprinkle of gochugaru.

Using a slow cooker makes these tender, aromatic beef ribs an easy meal to come home to. Ask our butchers to cut the ribs into 3- to 4-inch pieces for this recipe. Serve with brown rice, shredded red cabbage and steamed spinach.
 
Ingredients
  • 4 pounds beef short ribs, cut into 3- to 4-inch pieces
  • 1/2 teaspoon kosher salt
  • 1 tablespoon safflower oil
  • 3 tablespoons reduced-sodium soy sauce
  • 3 tablespoons brown sugar
  • 3 tablespoons gochujang
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons finely diced peeled fresh ginger
  • 4 cloves garlic, minced minced
  • 4 scallions, thinly sliced
  • 1 cup cilantro leaves, roughly chopped
  • 1 tablespoon toasted sesame seeds
  • 1 thinly sliced serrano pepper, divided
Method
 
Sprinkle ribs with salt. Heat oil in a large skillet over medium-high heat. Add ribs and cook, turning occasionally, until browned on all sides, about 10 minutes. Transfer ribs to a 7-quart slow cooker.
In a small bowl, whisk together soy sauce, brown sugar, gochujang, vinegar, ginger, half of the serrano, garlic and 1 cup water, then pour over ribs. Cover and cook on low until ribs are very tender, about 8 hours.
 
Transfer ribs to a platter and cover with foil (you can serve them with or without the bones). Pour liquid from slow cooker to a glass measuring cup and let sit until fat rises to the top, 2 to 3 minutes, then discard fat. Pour sauce over ribs and garnish with scallions, cilantro, sesame seeds and remaining serrano.

Serve these burgers on crusty hunks of baguette, just like a traditional Vietnamese banh mi sandwich. For a fresh and easy condiment, toss shredded carrots, cucumbers and lettuce with rice vinegar and a pinch of sugar and pile onto the burgers.
 
Ingredients
  • 3/4 pound 90% lean ground grass-fed beef
  • 1 cup shredded carrots
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons rice vinegar
  • 2 teaspoons sugar
  • 3/4 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • Canola spray oil (optional)
Method
 
Combine beef, carrots, cilantro, vinegar, sugar, salt and pepper in a large bowl and form into four (4-inch) patties. 
 
Grill over medium heat or broil, flipping once, until cooked to your liking, about 6 to 8 minutes. 
 
Or, spray a large skillet with cooking spray and cook over medium heat, 6 to 8 minutes. 
 
Serve on baguette slices.

Hamantaschen are shortbread like cookies filled with jam that are traditionally served around the Jewish holiday of Purim. Shaped like Haman's hat, the cookies represent the defeat of their enemy. We love them buttery cookie and sweet jam combo.
 
INGREDIENTS
 
4 1/2 c.  all-purpose flour, plus more for surface
 
1 1/2 tsp.  baking powder
 
1 tsp.  kosher salt
 
1 c.  (2 sticks) butter, softened
 
1 c.  granulated sugar
 
large eggs
 
1 tsp.  pure vanilla extract
 
(12-oz.) can Solo apricot fruit filling
 
Egg wash
 
DIRECTIONS
 
In a medium bowl, whisk flour, baking powder, and salt until combined. 
 
In a large bowl, beat butter and sugar until light and fluffy.
 
Add eggs and vanilla and beat until well combined.
 
Add dry ingredients to the wet and beat until just combined.
 
Turn dough onto a piece of plastic wrap and form into a ball.
 
Wrap in plastic and flatten into a disc.
 
Refrigerate until very cold, at least 2 hours and up to overnight. 
 
Line 2 large baking sheets with parchment paper.
 
On a lightly floured surface roll out one disc of dough into a ¼-inch thick circle.
 
Using a 3 ½ inch round cutter, cut out circles and arrange on prepared baking sheets.
 
Top each circle with a heaping teaspoon of apricot filling in the center.
 
Brush outer circle with egg wash. Bring up three corners and pinch to form a triangle. 
 
Freeze cookies until firm, about 20 minutes. 
 
Preheat oven to 375°. Bake until golden on bottom, 12 to 15 minutes. Let cool on a wire rack.
