 This News Letter I am sending out a little bit early this month, because we have a new website.  I just wanted to avoid any confusion.  So, new website.
 
 
We had some old code in the website that kept bringing up warnings that looked like malware or viruses were present.  They were not.  It was old code for an old media

15 benefits of baking soda
(8 for your health, 7 for your home and garden)
Baking Soda for Health:
  1. Oral Health: Baking soda has antibacterial and antimicrobial properties, plus it freshens breath, so it can be great for oral health. Simply mix half a teaspoon full in a half glass of warm water, swish around in your mouth for 30 seconds, and then spit it out.
  2. Soothing Canker Sore Pain: Canker sores are small ulcers that form inside the mouth. Research shows the same baking soda recipe above is excellent for easing the pain of canker sores.
  3. Heartburn Remedy: Research confirms this "folk remedy" may work well for acid reflux, a.k.a. heartburn. Mix a teaspoon of baking soda in a glass of cold water and consume it slowly.
  4. Help Sunburns, Itchy Skin, Bug Bites, Bee Stings: You can either take a bath in which you've added 1 to 2 cups of baking soda, or target specific areas on your body by adding a touch of water to baking soda and creating a paste. (For sunburns, also adding in some oatmeal to the paste works even better!)
  5. Removing Calluses: Calluses are those hard patches on skin, often on the feet or hands, caused by longterm friction. Soaking them in a solution of baking soda and water has been shown to soften and eliminate them.
  6. Exfoliating Face Mask: Because of its anti-inflammatory and antibacterial properties, baking soda can be a very effective exfoliator. Add 1 to 2 tablespoons baking soda, the juice of a half of a lemon, and a tablespoon of honey (add a touch of water if too thick). Gently apply to your face (don't scrub) and let it sit for about 10 to 15 minutes, then rinse.
  7. Boosting Exercise Performance: Consuming baking soda may help you perform at your peak for longer. Research shows this is especially true for high-interval training. (Because you would consume a mixture of baking soda and water prior to exercise, though, DO talk to your doctor prior to doing so, as some people may experience side effects such as nausea or upset stomach.)
  8. Slowing Kidney Disease: Yes, research even shows consuming baking soda can significantly slow kidney failure. Again, though, definitely DO talk to a health professional prior to using it for this purpose.
     
Baking Soda for Home and Garden
  1. Remove Pesticides from Fruits and Veggies: Research shows soaking fruit and veggies in a solution of about one teaspoon of baking soda for every two cups of water removes almost all pesticides. Soak for at least 10 to 15 minutes, and be sure to rinse them after soaking.
  2. Neutralizing Refrigerator Odors: Most people know this one well. Baking soda doesn't just mask odors, it interacts with odor particles to eliminate them. Simply fill a cup with baking soda and locate it at the back of your fridge.
  3. Neutralizing Room Odors and Trash Can Odors: For the same reasons above, baking soda works well to neutralize odors elsewhere, especially in smaller spaces like closets, cars, and garbage cans. For the garbage, many people add 1/4 cup directly to the bottom of the trash can and then periodically dump it, wash it out, and add new baking soda. Others create sachets using cheese cloth or other fabrics and place at the bottom of the garbage.
  4. Remove Carpet Odors and Stains: Baking soda is exceptional for eliminating odors and stains from rugs and carpets. For odors, you can spread a thin layer of baking soda on the carpet, let it sit for about an hour, and then vacuum. For stains, spread it over the stained area, then spray with a 1 to 1 solution of water and vinegar, let sit for an hour to dry, scrub the area with a brush, then vacuum.
  5. Whitening Laundry: Because baking soda is an alkali, it can help remove stains and dirt and whiten and brighten clothes. Just add a half a cup to your regular laundry detergent.
  6. Killing Weeds in Cracks: Research shows -- and as an avid gardener I can confirm -- that shaking some baking soda in the cracks in rocks, sidewalks, driveways and such near the base of weeds can kill them. BE CAREFUL not to use around plants you want, though, as it can harm or kill them, too.
  7. Putting Out Grease / Oil Fires: As a child I remember several occasions where my mother quickly poured baking soda on grease fires on our very old-fashioned stove. Baking soda reacts with heat to create carbon dioxide, which douses fire, and it is especially useful to have on hand for grease/oil fires where water can be ineffective.
Now, while research has shown baking soda can be very effective for these uses above, as every baking soda "fan" knows, it can have many other uses, too.
 
And the best part is, this powerful and versatile natural solution is super inexpensive :-)
Okay, then, from the list above, one of my personal favorite uses of baking soda is getting rid of weeds!

Peppered Steak with Mushrooms and Red Wine Pan Sauce
 
Serves 2
 
Share the love and a sweetheart steak on Valentine’s Day with this recipe for two. While your steak rests, make the red wine sauce in the same skillet, capturing any flavor left behind. Thinly slice the steak to share and pour two glasses of wine! Serve with your favorite green vegetable.

Ingredients
 
1 sweetheart steak, or 1 (12-ounce) New York strip or ribeye steak
1/2 teaspoon fresh ground black pepper
1/4 teaspoon fine sea salt
6 teaspoons butter, divided
8 ounces sliced cremini mushrooms
1 large shallot, thinly sliced (about 1/3 cup)
1/2 cup dry red wine
1/3 cup beef broth

Method
 
Pat steak dry and coat with pepper and salt. Set aside. In a medium skillet, heat 1 teaspoon butter over medium-high heat until hot. Add mushrooms and 1 tablespoon water. Cover and cook about 5 minutes or until mushrooms release liquid and start to become tender, stirring occasionally. Uncover and cook 3 to 4 minutes longer or until mushrooms are tender and golden. Transfer to a bowl.
 
Melt 3 teaspoons butter in the skillet over medium-high heat. Add steak and brown on all sides, until done to your liking. Remove and cover to keep warm.
 
Add shallot to the skillet and cook until starting to brown, 30 seconds to 1 minute, stirring.
 
Add wine and stir, scraping up brown bits from bottom of pan. Cook until reduced by half, about 3 minutes.
 
Stir in broth and bring to a simmer. Cook until reduced by half, about 3 minutes longer.
 
Remove from heat and whisk in remaining 2 teaspoons butter just until it melts.
 
Slice steak and divide among 2 serving plates. Toss mushrooms with red wine sauce and spoon over steak.

This weeknight wonder is packed with veggies and beans. Top with crunchy croutons and grated Pecorino Romano cheese.

Ingredients
 
2 tablespoons extra-virgin olive oil
1 cup diced yellow onion
4 large garlic cloves, roughly chopped
1 (32-ounce) box low-sodium vegetable broth
4 cups packed chopped kale
1 (14.5-ounce) can Italian-style diced tomatoes
1 (14.5-ounce) can no-salt-added cannellini beans, drained and rinsed
1 (14.5-ounce) can sliced carrots, drained, or two large carrots, peeled and sliced

Method
 
In a large saucepan, heat olive oil over medium heat.
 
Add onion and cook 3 minutes.
 
Add garlic and cook 2 minutes longer.
 
Add broth, kale and tomatoes (and fresh carrots, if using) and cover.
 
Cook 5 minutes or until kale is tender.
 
Add beans and canned carrots and heat thoroughly. Serve hot.

Enjoy this savory dip, a mixture of delicious crab and artichokes in a creamy base, with crostini, pita chips, crackers or crudités.

Ingredients
 
1 (8-ounce) tub lump crabmeat
1 (14-ounce) can artichoke hearts in water, drained and coarsely chopped
1/2 cup diced red bell pepper
1 (8-ounce) package Neufchâtel cheese
1/2 cup light mayonnaise
4 tablespoons chopped fresh chives, divided
1 tablespoon fresh lemon juice
2 teaspoons Worcestershire sauce
1/4 teaspoon sea salt

Method
 
Preheat oven to 375°F. In a large bowl, break up crabmeat into slightly smaller pieces, feeling through mixture to make sure no shell pieces remain. Stir in artichokes and bell pepper and set aside.
 
Place Neufchâtel, mayonnaise, 3 tablespoons chives, lemon juice, Worcestershire and salt in the bowl of a food processor and pulse until just combined. Transfer to bowl with crab mixture and gently stir to combine. Spread into a 1-quart shallow baking dish. Bake until mixture is bubbling, about 30 minutes. Sprinkle with remaining 1 tablespoon chives and serve.
 
Note: The dip can be assembled up to 1 day ahead and refrigerated until ready to bake. If doing this, let sit at room temperature 15 minutes before putting in the oven, and increase baking time by about 5 minutes.

This deliciously simple dish is a snap to prepare. The zesty sauce comes together in almost exactly the amount of time it takes to bring a pot of water to a boil and cook the pasta.
 
Ingredients

8 ounces whole wheat linguine
1 tablespoon extra-virgin olive oil
5 garlic cloves, sliced
1/8 to 1/4 teaspoon red pepper flakes
2 cups diced fresh or canned tomatoes with all juices
2 1/2 tablespoons drained capers
1 pound swordfish, skin removed, cut into 3/4-inch chunks
1/3 cup fresh basil leaves, torn into pieces
 
Method

Bring a large pot of water to a boil and cook pasta until al dente, about 9 minutes.
 
Meanwhile, heat oil in a large, deep skillet over medium-high heat.
 
Add garlic and cook until just golden around the edges, about 3 minutes.
 
Stir in pepper flakes first, then tomatoes and capers.
 
Bring to a boil, lower heat and simmer 5 minutes.
 
Add swordfish and stir into sauce.
 
Cover skillet and simmer, stirring gently once or twice, until chunks of fish are almost opaque in the center, about 4 minutes.
 
Be careful not to overcook.
 
Drain pasta, transfer to a platter or large bowl, ladle sauce over pasta and sprinkle with basil.

A simple yet elegant dessert that you can make up to a day in advance for special occasions, whether for those with special diets or not! Serve it nice and cold for the best results.

Ingredients

1/2 cup berry blend 100% juice
1/2 cup vegan cane sugar
1/4 cup cornstarch
1/8 teaspoon fine sea salt
2 cups (from 2 6-ounce packages) fresh raspberries, divided
14-16 ounces silken tofu (refrigerated variety), drained
1 1/2 ounces dark chocolate, shaved with a vegetable peeler
Mint sprigs, for garnish (optional)

Method

In a medium pot, whisk together juice, 1/2 cup water, sugar, cornstarch and salt and bring to a simmer over medium heat, whisking often.
 
Reduce heat to medium-low and cook 30 seconds more, whisking constantly; remove pot from heat. (Juice mixture will be very thick.)
 
In a food processor, purée 1 1/2 cups raspberries and the tofu until creamy and smooth.
 
Add juice mixture and process until well combined.
 
Spoon mousse into small dishes or a serving bowl, cover and chill until very cold, 4 to 6 hours.
 
Garnish with chocolate shavings, remaining 1/2 cup raspberries and mint. Serve immediately.
